From Terroir to Table: A Tale of Comté Cheese and Côtes du Rhône Wines

Try Comté cheese for a delicious « Welsh Rarebit » and pair it with Côtes du Rhône wines. These two Protected Designation of Origin (PDO), represent diverse and unique terroirs. From soil to table, both the cheese and wine creates a harmonious symphony of flavors, offering simple yet exquisite food and wine pairings.

Embark on a culinary journey using Comté cheese to craft a delectable « Welsh Rarebit. »

What you need :  ¼ c butter ¼ c flour ½ tsp salt ¼ tsp pepper 1 tbsp old style mustard 2 tbsp of Worcestershire sauce 1 c whole milk ½ c beer (IPA or Pale Ale) 1 c Comté cheese, shredded 6 slices bread

Melt butter in a saucepan, then stir in flour. Cook and stir until smooth and bubbly. Gradually stir in milk, then bring to a boil. Melt Comté in the sauce then add in the beer, seasonings, and sauces. Remove from heat. Toast bread slices, then spoon cheese sauce over. And cook under broiler until cheese is bubbling and golden.
