Perfect for the holiday season, this recipe celebrates two protected products through PDOs — Protected Designations of Origin. This label ensures that the products follow strict European standards guaranteeing authenticity, origin, and quality, just like Comté cheese and Côtes du Rhône wines.
Côtes du Rhône wines are shaped by the Rhône River, with vineyards dating back to Roman times. Crafted with care, they come in three colors: red, white, and rosé.
Comté is made in the Jura Mountains, also not far from the Rhône River. It is known for its unique, nuanced flavors — no two wheels ever taste the same.
How to make it:
- Cut day-old bread into large cubes and place them in a bowl.
- Pour warm stock over the bread along with a splash of white Côtes du Rhône and let it soak.
- Sauté onions in butter until soft, then mix them into the soaked bread with fresh herbs.
- Grate a generous amount of Comté and fold it into the mixture.
- Transfer everything to a baking dish and top with more grated Comté.
- Bake until the panade is golden and the cheese is beautifully melted on top.
