Both are Protected Designations of Origin (PDO) coming from stunning regions in France and connected by the Rhône River. Their PDO status ensures they are crafted using sustainable agricultural practices that prioritize environmental care and biodiversity. It’s a simple yet elegant way to kick off your next party!
Here is what you need : 1 c flour (regular or gluten free), 2 tsp finely chopped fresh rosemary, 3/4 tsp fine sea salt, pinch cayenne pepper, 1 stick unsalted butter, 8 oz Comté cheese, shredded (3 c shredded), 2 tsp water, 1 large egg, 1/2 c walnuts, finely chopped
Whisk together the flour, rosemary, salt, and cayenne. Beat softened butter and shredded Comté cheese until combined. Add the dry ingredients and mix with a bit of water until the flour is incorporated and form a dough. Shape into a 10 inch long log, brush with egg wash, and roll in chopped walnuts. Wrap in plastic wrap and refrigerate for 1 hour. Slice the dough into 1/4-inch thick rounds, and bake at 350°F until golden. Cool and serve it with a glass of Côtes du Rhône wines.
