A pairing rooted in history and flavor! Crafted for nearly 1,000 years, Comté cheese and the historic vineyards of Côtes du Rhône wines — dating back to Roman times — are two Protected Designations of Origin (PDO) from France. Sheila shows us how, together, they create an unforgettable culinary experience:
What you’ll need: 4 large Yukon Gold potatoes (peeled), 1 1/2 cups grated Comté cheese, 3 tbsp butter, 2 tbsp minced garlic, 1 tsp dried thyme, 2 tbsp parsley, 1 tsp chives, 1 tbsp truffle oil, salt and pepper to taste.
How to make it: Preheat the oven to 375°F and grease a 12-cup muffin tin. Thinly slice the potatoes and coat them with a mixture of melted butter, garlic, thyme, parsley, salt, and pepper. Layer 4-5 slices of potato in each muffin cup, adding grated Comté cheese between layers. Press down gently, cover with foil, and bake for 30 minutes. Remove the foil, sprinkle more cheese on top, and bake for another 15-20 minutes until golden. Let cool for 5 minutes, then carefully remove the stacks. Garnish with parsley, chives, and truffle oil.
Serve these delectable potato stacks with a glass of white, red, or rosé Côtes du Rhône wine for a perfect French pairing. Cheers to a timeless pairing!
