Comté, a semi-hard cheese from the Jura Mountains, has been crafted for nearly 1,000 years and is renowned for its nutty, buttery, and fruity notes. Connected by the Rhône River, Côtes du Rhône is a historic wine region with vineyards dating back over 2,000 years to Roman times, producing red, white, and rosé wines that are bold, balanced, and endlessly versatile.

Together, these two PDOs (Protected Designations of Origin) offer more than just flavor — they bring centuries of French craftsmanship straight to your table.

Comté & Caramelized Onion Pastry Pockets recipe:

Ingredients: 1 sheet puff pastry (thawed), 1 tbsp olive oil, 1 yellow onion (thinly sliced), a pinch of thyme, salt + pepper, ¾ cup grated Comté cheese, 1 egg (for brushing).

How to make it: Cook the onions low and slow in olive oil with thyme, salt, and pepper until golden and caramelized (about 25 minutes). Cut the puff pastry into squares (about 6). Add a spoonful of onion and a sprinkle of Comté to each, fold into triangles, and seal the edges with a fork. Brush with egg wash and bake at 400°F for 15–18 minutes until golden and flaky. Let cool slightly, pour a glass of Côtes du Rhône!
